In the past few years I've developed quite a liking for carrot cake so I decided I had to try out the carrot cake cookies that were part of this month's Craft:along. They aren't bad, but they aren't what I was hoping for either. I don't know why, but my cookies came out really thin and slightly overcooked. I even took them out of the oven early because I could smell them getting a little toasty. They don't taste bad, but I wish they were more cake-like and larger. You can't tell from the pic, but they're pretty tiny.I've reread the recipe and I'm sure I didn't miss any ingredients or make them the wrong size. I think I'll try them again, but make the cookies twice the size.

Hmmm, I have no idea. I am not a very good baker. They sound delicious. I love the cream cheese frosting on carrot cake!
My cookies came out AOK, but the frosting? Well, I used the canned stuff because of my Supah Laziness and, well, it left a little to be desired. I'm sure the homemade stuff would have put them over the top.
